2 Amazing unique sides for your smoked Prairie Fresh Ribs

This recipe adds a refreshing and slightly spicy counterpoint to the richness of BBQ ribs.

Ingredients:

• 1 cup fresh corn kernels (or frozen kernels, thawed)

• 1/2 cup all-purpose flour

• 1/4 cup chopped red onion

• 1/2 jalapeno pepper, seeded and finely chopped (adjust for desired spice level)

• 1/4 cup crumbled feta cheese

• 1 large egg

• 1/4 cup milk

• 1 tbs Slaps BBQ Rub

• Salt and freshly ground black pepper, to taste

• Vegetable oil for frying

Instructions:

1. In a large bowl, combine corn, flour, red onion, jalapeno, feta cheese, chili powder, paprika, salt, and pepper.

2. In a separate bowl, whisk together the egg and milk. Add the wet ingredients to the dry ingredients and mix until just combined.

3. Heat a thin layer of vegetable oil in a large skillet over medium heat.

4. Scoop the batter by tablespoons and flatten slightly into patties. Fry for 2-3 minutes per side, or until golden brown and crispy.

5. Drain on paper towels and serve hot alongside your BBQ ribs.

Ingredients:

• 1 pound Brussels sprouts, trimmed and halved

• 4 slices bacon, chopped

• 2 tablespoons olive oil

• 3 cloves garlic, minced

• 1/4 cup grated Parmesan cheese

• 1/4 cup chopped fresh parsley

• Salt and freshly ground black pepper, to taste

Instructions:

1. Preheat oven to 400°F (200°C). In a large bowl, toss Brussels sprouts with olive oil, salt, and pepper.

2. Spread the Brussels sprouts on a baking sheet and roast for 20-25 minutes, or until tender and slightly browned.

3. While the Brussels sprouts are roasting, cook the bacon in a skillet over medium heat until crispy. Remove the bacon from the pan, leaving the rendered fat.

4. Add the garlic to the bacon fat and cook for 30 seconds, until fragrant.
